Vacuum storage

The most effective method for preserving the freshness and aromas of vanilla is vacuum packaging. This technique prevents oxidation and drying out of the pods by eliminating air. Here's how to do it:

  1. Use a vacuum machine : Place the pods in a vacuum bag and remove the air using the machine. Make sure the bag is well sealed.
  2. Without a vacuum machine : If you do not have a machine, keep the pods in their vacuum bag provided, which you have taken care to open carefully. Squeeze to remove as much air as possible, then seal tightly with bag clips.

Always store vacuum-sealed pods away from light and heat to maximize their shelf life.

Storage in a glass case

Another effective method is the use of a glass case:

  1. Choose a suitable case : Prefer an airtight glass case, narrow enough to hold the pods tight but without crushing them.
  2. Storage conditions : Place the case in a cool, dark place and away from heat sources. Avoid temperature fluctuations.

Store in paraffin paper

This method is ideal for those who do not have a vacuum machine:

  1. Wrapping : Wrap each vanilla bean in wax paper to create a protective barrier against air and moisture.
  2. Storage : Place the packaged pods in an airtight glass jar, which you will keep away from light and heat.

Storage in the freezer

Although the freezer is not the ideal storage method, as it will stop the development of aromas, it can be an alternative solution to keep the pods fresh. Here's how to use it:

  1. Prepare the pods : Place the pods in a vacuum bag or resealable plastic bag, making sure to remove as much air as possible.
  2. Freezer Storage : Store the pods in the freezer. Be aware that this may cause small white dots to appear on the pods. Don't worry, it's not mold but vanillin crystals that have frozen.

Before using frozen pods, allow them to come to room temperature in their packaging to avoid condensation.

Other essential precautions

  • Avoid inappropriate containers : Never store vanilla in a plastic box or glass container with cork stoppers, as these types of storage encourage the development of mold.
  • Container size : Use a container suitable for the size of the pods. A container that is too large will expose the pods to too much air, which can cause them to dry out more quickly.
  • Storage conditions : Always store the pods in a cool, dry and dark place. Avoid locations exposed to direct light or temperature variations.
